Jewish chef Thierry Marx and Ukrainian heroes: how Michelin-starred cuisine helps restore interest in life to the defenders of Mariupol

Ukrainian heroes, including the defenders of Mariupol, took a unique culinary course under the guidance of Thierry Marx, a Michelin-starred Jewish chef with a worldwide reputation. Project “Heart of Azovstal” helps restore lives and strengthens bonds between peoples.

Thierry Marxone of the most famous French chefs, became a mentor for Ukrainian heroes who were trained at his culinary school Cuisine Mode d'Emploi(s) in Toulouse.

“For me this project is of particular significance. I am a Jew, my grandfather, Marcel Marx, was a refugee from Poland, and our people know the value of the struggle for freedom. The war in Ukraine is a challenge to the whole of Europe,” said Thierry Marx.

This project was organized with the support “Heart of Azovstal”an initiative aimed at helping Ukrainian defenders and displaced people. Among the participants were not only veterans who returned from Russian captivity, but also representatives of destroyed businesses from Mariupol.

Thierry Marx was born into a Jewish family in Paris. His grandfather, who fled the Nazis, was a member of the anti-communist resistance. This family history inspired Marx's humanist projects.

“My grandfather fought for freedom, and I believe that cooking is also a way to change lives. We teach people to start again, even after war and loss,” adds Marks.

In the past, Thierry himself served in the French marines and participated in peacekeeping missions, which makes him especially sensitive to the fate of people affected by military conflicts.

The course lasted two months, and 12 people took part in it:

• Defenders of Mariupolwho were captured and returned home.
• IDPswho left their homes because of the war.
• The youngest participant in the course is only 18 years old.

The project included studying French cuisine, baking and restaurant business. After the training, the participants received professional diplomas and the opportunity to work in a restaurant La Cantine.

The initiative was made possible thanks to a public organization “Heart of Azovstal”which continues to support the families of Mariupol defenders.
